As long as a knife is sharp and has a good feel, I'm satisfied. I've never felt that a particular knife was my "favorite." But that's changed with the OXO Good Grips 4-Inch Mini Santoku Knife.
It's razor-sharp, has those indentations that help things not stick to it, a very good rocking curve on the blade, and a grippy handle with a very pleasing shape. But the best part is the proportionately very wide blade (1 5/8"), which gives you great control. You can cut a truly straight line through anything, for example an onion or tomato or salami, where a narrower knife, say a paring knife, might veer off. The Japanese-style blade is also thinner and has a more acute angle than a conventional knife, which allows you to cut very thin slices.
And the price makes it a bargain.

I bought this knife at Tuesday Morning for less than 9 bucks. It was purchased for a kitchen where the clean up crew doesn't hand wash and dry the knives. This knife has rust spots where water was left to air dry (which on would expect in a good high carbon knife).
Functionally, this is an easy knife to use. It has a large comfortable handle, well made tapered blade,and is made of High Carbon Stainless Steel. When I use it, the knife gets hand washed and dried with a sharpening before it is put up. This knife is not as hard forged as my Henckels Four star knives which means one must sharpen it more often, but also it means this knife is easy to sharpen.
I like OXO products and this knife is better than it has to be. I recommend it!

I ordered these knives while staying at my son's house. Their knives were terrible. When a sliced Orange looked like I had used my teeth, it was time to order some replacements. I read the reviews, which were good and so I ordered two knives and scissors. After ordering the scissors, I found some in a drawer, so they have not been used. The two knives are really good, and especially so, for their cost.
Very sharp, hopefully they will hold up well. They slice better than my very expensive German ones!

I bought this Oxo 4-inch Santoku knife for mom for Mother's Day. She is thrilled with it. She has terrible osteoarthritis, and has already had one joint replacement in her dominant hand, so it is not easy for her to find kitchen tools she can comfortably use.
She cut up a cantaloupe the other day with no problem. Normally, she would avoid even buying the melon because she would have a hard time preparing it. We are both very happy with this knife.

I ordered the Oxo 6 1/2" Santoku knife, liked the feel of it so decided to get the smaller one too.
I expected to use the larger blade most of the time but it turns out this little 4" is the one I reach for the most often. I use them both really. I like how they hold an edge, the balance and weight in my hand. I've never used the really expensive brands so can't compare but I thought these were surprisingly good quality for the price.
