Let me first say. I have very much enjoyed this pasta server (also known as pasta fork). It is made from a single piece of beechwood. It has a nice wood grain pattern without any visible wood porous. I have applied mineral oil, beeswax and tung oil for care. I have owed it since the beginning of March 2009 and it has been used for about 30 times or so, without showing any sign of crack and I don't expect it will (update from Dec 2009). What I really appreciate about this tool is that it just isn't easy to find a wooden pasta fork, and here we have a good one.
I am an advocator for wooden tools, though I do own a few stainless steel tools as well. Wooden tools are (1) non-toxic, (2) affordable, (3) universal, (4) attractive, and (5) symbols of expertise. The first two points are widely accepted. Wooden tools are, in fact, more universally adaptable than metal and plastic tools. Metal tools can damage nonstick coating cookware, enamel cookware and scratch off seasoning coating from cast iron and carbon steel cookware. Plastic tools simply cannot hold up at high heat and can literally deform if not melt. Wooden tools are very gentle and can be used in any type of cookware at fairly high temperature, except under direct flame like grilling. Unlike metal and plastic tools, wooden tools look better as they age. Finally, a wooden tool, especially an aged one, implies a level of culinary expertise.
Purchasing wooden tools, however, can be a miss-or-hit experience. Sure, we need to apply mineral oil, tung oil, or beeswax to them, especially before the first use. We also need to prevent them from soaking up excessive water. However, a new wooden tool made from an inferior wood piece can still crack even if you followed all the steps. Needless to say, it is a lot more difficult to perform quality control on wood than on stainless steel and nylon - therefore wood tools can be a hit-or-miss. Luckily they are not expensive and once they survived the first several of usages, they tend to be trouble-free.
